Cooking Instructions: Add 1 tbsp of oil, 1 tbsp of curd and water (as needed) to the complete Mix. Knead well to form a soft dough and keep aside for 15 min. Make small round balls and steam them until well cooked. Fry/Roast the cooked ‘Baatis’ in ghee to get the authentic flavour.

Pearl millet (Pennisetum glaucum) or “Bajra” is a widely grown variety of millet cultivated in the African and Indian subcontinent from ages. It has the capability to survive under drought and in high-temperature conditions. Bajra is well-known through its use in making Bajra Bhakri - a traditional Maharashtrian type of bread. Bajra, also known as Bajri or Pearl Millet, is a heat-producing ingredient. Hence, it is used primarily in winters to add to the body.

Uses: It can be used to make bhakri, roti, poori, barfi, papad and thalipeeth.

Recipe Bajra Roti: Take 2 cups bajra atta, ½ tsp salt and mix well, add ½ cup of hot water and start to knead to the soft dough (10 minutes). Pinch a small ball sized dough and knead again, dust with bajra flour pat with both the hands until the roti turns as thin as possible. Put over hot tawa and now spread water over the roti. wait until the water evaporates, flip it to the other side. Cook properly and serve bajra/ sajje rotti with jaggery or curry.
