Brown chickpea or Kala chana, also known as chole in North India or desi chana is the most popular variety of chickpea and is widely consumed in India. Kala chana looks back dried and shriveled. It is available in small globules and it is hulled and split to make it into chana dal. Kala chana is a legume loaded with protein, fiber, and carbohydrates. It is a good source of vitamins like B7, C, folate, niacin, thiamin, riboflavin, and minerals including manganese, phosphorus, iron, and copper. It is among the few ingredients which can be consumed as a staple in the main course, as a snack to nibble, and as chaat or salad. Kala chana adds both protein and fiber to the diet. For added benefits, you can sprout it. If you are planning to sprout chickpeas, soak them overnight and drain water, pat them dry the next morning. Allow it to dry under room temperature to sprout it in two days.
