Undhiyu is a very popular dish in western India, especially Gujarat. It is prepared using fresh vegetables, beans, herbs, and a special combination of spices, which gives it a unique taste. Undhiyu is often prepared on the occasion of Uttarayan, when people fly kites and celebrate the festivities on the terrace. Undhiyu is famous for its signature taste, which is possible only with the authentic Undhiyu Masala.

Undhya Recipe:
Undhiyu roots from the land of Gujarat and is widely loved by the masses. This winter mix vegetable made with special Wonder Mera Wala Undhiya Masala will mesmerize you with its aroma and flavors.
- For the Green Masala - In a grinder, make a coarse paste of fresh coconut, coriander leaves, green garlic, ginger, green chilly, lemon juice, sugar, and salt. Keep aside.
- In an aluminum pressure cooker, heat oil, add Wonder Mera Wala Cumin Seeds, and hing.
- Add the purple yam and saute till golden brown. Add potatoes and brinjal and saute it for 2 mins.
- Add the Surti papdi halves, Lilva beans, and a pinch of soda. Mix it all well.
- Layer it with the green masala, add Wonder Mera Wala Undhiya Masala, Turmeric powder, and Red Chilli powder, sugar, lemon juice and salt for taste. Add 1/2 cup of water.
- Pressure cook it on a medium flame for at least 3 whistles and its ready.
- Garnish the Undhiyu with coriander leaves. Serve hot with Poori and Jalebi.
